I think you're talking about the cluster screen. That does change with different drive modes, but my infotainment screen has never changed colors when I change drive modes.

The best method I've found is to rest my hand on the steering wheel such that it's weight is constantly applying a little torque to the steering wheel and you can feel the system tugging the wheel back to stay in the lane.
I think OP assumed the app is directly communicating with the vehicle at all times when it's actually Ford's servers that the vehicle is connected with and the app just interacts and pulls data from the servers.
