I have not done 7,500, but I just towed a trailer that's about 4,000 pounds over 1,000 miles and it was absolutely no problem- except killing my mileage. I would imagine 7,500 would feel a bit heavy but doable.
Generally how I feel too. I got ACC, remote start, 360 camera, etc with the XLT. I actually like leather and would have liked to have that, but not for $5k. Other than leather the Lariat really had nothing else I cared much about. The XLTs are really nicely equipped these days.
Might not be. I just used Forscan for the first time- enabled rock crawl (that shifts it into 4L and turns on the front camera to see obstacles better), changed the turn signal number, and a couple other small things.

I ordered a tap from Amazon- basically a ground and a hot wire you stick into connectors to get power with a USB plug on the other end. Used a multimeter to find the appropriate wires to tap in to and jammed them in there. I used a dremel to make a spot for the USB plug. Super easy.
Hey fellas, thanks for all the great information here. I'm about to get started on this to enable rock crawling mode, adjust tires once installed, and number of turn signals. In reading through the spreadsheet, I don't see a way to disable the "keep your hands on the wheel" lane keeping nanny...
