I’ve had the same issue- Always turned it on and it goes off the next day.
Solution I found- prep all your settings (steering/exhaust/Suspension/auto start-stop off/ambient lights on… etc) then save under the “R” button.
I got mine to stay on.

An instructor will drive you around for about 40 seconds in a hot lab, I was able to really feel how the truck reacts in the most aggressive way possible. So in that sense, I was able to learn the limitation of the truck.
