There have been plenty of documented instances of these car companies selling your data from the telematics systems. GM lost a big old lawsuit a few years back. Many GM owners were pulling the OnStar modules from their vehicles...

It would be nice if they forced the manufactures to allow you to disable things from the infotainment system, without having to resort to pulling fuses or removing modules

All the local government or insurance company has to do is look at the difference between the timestamps from two different cameras to know if you’re speeding.

They can easily automate the tickets or insurance rate increases
