Does anyone know the difference between the KO3 vs the KO2 tires? I haven’t been able to find anything about them.

It looks like the KO3 are the latest generation of the KO series. As of right now it doesn't appear they are available for individual sale yet. Here's what little I could find:
BF Goodrich All Terrain Tires

I have been using KO2's since they came out and they've been great for me. First truck I put them on was my 2014 F-150 Raptor. Blew the original KO's out of the water. Fantastic in the winter when the roads haven't been plowed yet. Would just lock the rear diff and never had trouble. Haven't had any issues in the rain like others seem to have. My Bronco Raptor and Bronco Badlands both have KO2's and have been fantastic

Suck in the rain maybe because my taco is so light..I live in the south so no snow otherwise great
yeah, hopefully that is the reason. I had the originals on my jeep wrangler in the 90's and they were fantastic. The KO2's on my Tacoma just suck on wet roads but they are great otherwise.

I’ve found that K02 tires are highly rated in rain and snow, I’ve traveled in Northern Canada in the rain and snow and all across the southern US in rain. However once you get 25,000-30,000 miles on them they become slippery as heck.

That is a really short tire life

Yep, lots of tread left but they get slipper. I on my third set, I’ve read that the K03 has a somewhat more aggressive tread design, goggle K02 vs K03 you can see the break down

Slippery/not good in rain is an automatic no go for me. Florida doesn’t have snow, but it has torrential downpours in the wet season every single day. Good rain tires are my highest priority and then also something that will handle national/state forest dirt roads. But I’m sure mine isn’t going to come with KO3s because I’m getting a 2wd for the first time. I’m sure it’ll come with highway tires I’ll have to take it easy with until I get some ATs on.

Haven’t been in love with the Goodyears Duratracs I put on my last truck and have on my current Wrangler though. They’ve been okay, but I’ll be researching an alternative when the time comes.

If my Raptor order doesn't get picked up and I go with a Tremor then I'm considering the Falken Wildpeak AT3W for mine. I put them on my wife's Bronco Sport and really like them.

I have KO2 on my current Ranger and they get squirrelly on packed snow WAY too easy.

I had Duratrac on my Explorer Sport Trac and they were great in snow, but really loud.

I feel like BFG have had their lunch taken over their relatively awful wet performance for years now. If they couldn't figure out a way to address it after this much development time I don't understand what their engineers do all day.
