Running on the interstate at speed light traffic light load on the truck I thought this was a bit high. Without numbers it is hard to tell. What temperature is normal? No cargo.

Those gauges from left to right indicate Turbo Boost/Oil Pressure/Trans Temp/Engine Oil Temp.

My 2.7 does the same thing just not as extreme. What I have noticed is that on the highway when the AC is off the oil tenps get hot as the active grille shutters are closed. As soon as i turn on the AC the grille shutters own and the oil temps drop pretty quickly back to normal. Fords programing for the active grille shutters seems to cause the issue to me.
ah that is interesting. I'll have to keep an eye when summer gets hot. So the engine could get cooler if I turn on the AC if for some reason the grill wasn't open during normal operation? I didn't know AC could affect the shutters. I forgot they are active.

So complete a 900 mile trip, running 70+ gauge was as in the picture, 55-60 it was lower.

since the oil doesn't go through the radiator for cooling, can you guys maybe add a small oil cooler somewhere to help keep il temps down?

Yup exactly. I guess for aero they keep the shutters closed as much as possible when in the highway so when the ac isnt running they are closed, and when on there open

Even my ST used to read weird some days like that, especially pulling grades if I kept it in 6th and let it spool up when I should have downshifted instead, the temp would rise a bit on me.

Mine shows the same. I checked the oil temp on the dipstick with a contact pyrometer to see what it reads when the gauge is over half. Pyrometer was reading 180f. These factory gauges are buffered and rarely truly indicate actual temp or pressure. It is a bit odd though that it reads so high. Usually manufacturers have the gauge buffered to read "normal" until it gets really hot so customers don't complain. Bottom line, it's an "idiot" gauge. Ignore it unless it goes in the red.
